Fried Ice Cream

1 c. corn flake crumbs
1/4 c. sugar
1 tsp. cinnamon
Vanilla ice cream

Take one scoop of ice cream and form into ball. Make as many as needed. Put balls into freezer until hard. For at least 2 hours or over night.

Mix crumbs, sugar and cinnamon together. Roll ice cream balls in mixture pressing into ice cream.

Have deep fryer ready with oil as hot as you would for French fries. Put ice cream ball on slotted spoon and dip down in oil and right back out.

Some recipes say vanilla wafers, cookies or gram crackers. Why not try all to see what you like the best. Then the cooking time are different too, for many say 5-10 seconds. I would just watch the ice cream to see when it gets ligthly brown... they coating that is.

yummy Sopaipillas just like chi-chis..

Sopaipillas


1 package activated dry yeast
1/4 cup lukewarm water (110 to 115 degrees)
1 cup milk
2 tablespoons lard or vegetable shortening
1 teaspoon salt 2 teaspoons sugar
3 cups flour 1 teaspoon baking powder
Vegetable oil for deep frying

Makes about 36 sopaipillas.
Add yeast to warm water, stir to dissolve and set aside. Bring milk to a boil in a small saucepan over medium heat; remove from heat and add lard or shortening, salt, and sugar; cool to lukewarm. Stir in yeast mixture. Sift flour and baking powder together over a large bowl. Pour liquid ingredients into the dry and work into a soft dough. Turn onto a floured board and knead well until smooth and elastic, about 10 minutes. Cover dough with a towel and let rest for 20 minutes. Heat vegetable oil in a medium saucepan over high heat until it reaches 400 degrees. Roll dough to a 1/4-inch thickness and cut into triangles or squares about 3 inches across. Fry in hot oil, 2 or 3 at a time, until browned on both sides. Remove from oil, drain on paper towels, and repeat with remaining dough.
. For dessert, sprinkle while still hot with cinnamon and sugar or top with honey. Approximate values per serving (1 sopaipilla): 131 calories, 10 g fat, 1 mg cholesterol, 1 g protein, 9 g carbohydrates, 0 fiber, 73 mg sodium, 69 percent calories from fat.

lunar eclipse 2/21/2008

Eclipse will be situated, near the planet Saturn and the bright bluish star Regulus in the constellation of Leo. The effect will be to create a uniquely beautiful triangle in the sky consisting of the much-eclipsed moon, a bright naked-eye planet and one of the 21 brightest stars in the sky.

Lunar Eclipses are a viewed, as a troubled time in many religions for some believes it is the time the goddess is swirling the sea and scouring the lands looking for demons. Many still have religious believes about the eclipse. No food, only water. Pregnant women cannot watch the eclipse or the baby will have birth defects, even sex is forbidden for they may procreate. Having a child that may be blind, deaf or born with some defect. Mediating or chanting will help one become more holily.

Upsets and feelings of disorientation, feel restless, pressured and a buildup of emotions, and experience excitement and crisis. Especially after the annular solar eclipse, we had earlier this month.

For pagans we can only guess what our ancestors believed even reports have mixed findings. We honor the full moons. Many of them are different as different as pagan believes. Some believe that the full moon is the start of something, a good time for love spells etc. Where some trad has it as a tying up loose ends type of working. However, wherever your believes the eclipse super charges or give it an illusion that is in your face for you to have to face your illusions. You know not everything is what it seems. A time to get a new perspective. We all know the eclipse is where the earth is passing the moon and the sun. Darkening the moon causing it to turn a reddish to brown color.

So the time of the eclipse is a time to remember that some time nature happens and their will be sometime that tries to block your way. As you let go of the things that hold you back you will see the light once again. We will use this time to strengthen ourselves spiritually, mentally and physically, for whatever that may come.
